Evolution of a Mom
Yes, parenthood changes everything.
But parenthood also changes with each baby.
Here are some of the ways having a second and third child differs from having your first:
Your Clothes
1st baby: You begin wearing maternity clothes as soon as your OB/GYN confirms your pregnancy.
2nd baby: You wear your regular clothes for as long as possible.
3rd baby: Your maternity clothes are your regular clothes.
The Baby's Name
1st baby: You pore over baby-name books and practice pronouncing and writing combinations of all your favorites.
2nd baby: Someone has to name their kid after your great-aunt Mavis, right? It might as well be you.
3rd baby: You open a name book, close your eyes, and see where your finger falls. Bimaldo? Perfect!
Preparing for the Birth
1st baby: You practice your breathing religiously.
2nd baby: You don't bother practicing because you remember that last time, breathing didn't do a thing.
3rd baby: You ask for an epidural in your 8th month.
The Layette
1st baby: You prewash your newborn's clothes, color-coordinate them, and fold them neatly in the baby's little bureau.
2nd baby: You check to make sure that the clothes are clean and discard only the ones with the darkest stains.
3rd baby: Boys can wear pink, can't they?
Worries
1st baby: At the first sign of distress--a whimper, a frown--you pick up the baby.
2nd baby: You pick the baby up when her wails threaten to wake your firstborn.
3rd baby: You teach your 3-year-old how to rewind the mechanical swing.
Activities
1st baby: You take your infant to Baby Gymnastics, Baby Swing, and Baby Story Hour.
2nd baby: You take your infant to Baby Gymnastics.
3rd baby: You take your infant to the supermarket and the dry cleaner.
Going Out
1st baby: The first time you leave your baby with a sitter, you call home 5 times.
2nd baby: Just before you walk out the door, you remember to leave a number where you can be reached.
3rd baby: You leave instructions for the sitter to call only if she sees blood.
At Home
1st baby: You spend a good bit of every day just gazing at the baby.
2nd baby: You spend a bit of every day watching to be sure your older child isn't squeezing, poking, or hitting the baby.
3rd baby: You spend a little bit of every day hiding from the children.

Peanut Butter Cup Cookies

I have been waiting for a long three weeks to get to bake something in my new kitchen. Finally the day came. I ran across these and they just looked so yummy and made my mouth water. My kids agreed they would probably be really good to eat for dessert last night. Of course I have everything except for the peanut butter cups (the only reason you really want to eat the cookie) so I drove the 20 mile round trip before noon to get these babies, and they were made them well before dessert time. My sweet little angels just wanted one to taste test, little did I realize one ment one whole pan full (which was 12). I guess they had a good snack before supper, and I had to put the rest of the candy and the batter high up in the refridgerator to save for another day so the working man and I can have at least one.
Here is the recipe we used for them, but use with extreme caution:


2 1/2 cups (325 grams) all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (226 grams) unsalted butter, room temperature
3/4 cup (160 grams) light brown sugar
3/4 cup (150 grams) granulated white sugar
2 large eggs
1 teaspoon pure vanilla extract
Garnish:
48 miniature peanut butter cups, unwrapped




Preheat oven to 350 degrees F (177 degrees C) and place rack in the center of the oven. Butter, or spray with a non stick vegetable spray, 48 miniature muffins tins.
In a bowl, whisk together the flour, baking soda, and salt.
In the bowl of your electric mixer (or with a hand mixer), beat the butter. Add the sugars and beat until light and fluffy (about 2 - 3 minutes). Add the eggs, one at a time, beating well after each addition. Beat in the vanilla extract. Add the flour mixture and beat just until incorporated. Fill each miniature muffin cup with about one tablespoon of batter.
Bake the cookies for about 8 minutes, or until the cookies are lightly browned around the edges but still soft in the center. (Note: While the cookies are baking remove the foil wraps and paper liners from each peanut butter cup.) Remove the cookies from the oven, and gently press one miniature peanut butter cup into the center of each cookie. The peanut butter cup should be even with the top of the batter. Return the cookies to the oven and bake an additional 3 minutes or until cookies are golden brown. Remove from oven and cool completely (about two hours) on a wire rack before removing the cookies from the pan. These can be stored for several days at room temperature or in the refrigerator, or they can be frozen.
Makes about 48 cookies.

Menu Monday

In honor of Cinco de Mayo, I am sharing a recipe that we tried out a few weeks ago. I can honestly say it was a hit at my house. I am sure it was loved by all three kids just because it has the words "mac & cheese" in the title. It's one BIG YUMMY FIESTA in a dish and a definite must try.

Mexican Mac & Cheese

Ingredients
  • 12 ouncesdried mostaccioli or rigatoni pasta (3 cups)
  • 1 poundbulk pork sausage
  • 1 cupchopped onion
  • 1-16 ouncejargreen medium-hot salsa
  •  8 ouncepackageshredded Monterey Jack cheese (4 cups)
  • Tomato wedges, sliced jalapeno peppers, and chopped fresh cilantro
  • Salsa (optional)
Directions
1. Preheat oven to 350 degrees F. Lightly grease 3-quart rectangular baking dish; set aside. Cook pasta according to package directions. Drain; set aside.
2. Meanwhile, in large skillet cook sausage and onion until meat is browned and onion is tender. Drain fat, Return sausage and onion to skillet. Stir in green salsa.
3. In prepared baking dish layer half of the cooked pasta, half the sausage mixture, and half the cheese. Repeat layers. Bake, uncovered, for 35 minutes or until bubbly. Let stand 10 minutes. Top with tomato, jalapeno, and cilantro. If desired, serve with additional salsa. Makes 12 servings.
